A few weeks ago, we had a little cold front come through and I was hankering for some soup. If you're from the north and you don't know what "hankering" is, it basically means that I wanted some some really really badly! =)
I couldn't get a specific soup that my mom makes out of my head, so I gave her a call and asked for the recipe. It was amazing!!
Crawfish (or Shrimp) Corn Soup
1 stick of butter
1 medium sized onion, chopped
1 bellpepper, chopped
Saute them all together.
Add 2 cans creamed corn and 2 cans cream of potato soup.
Cook on low heat for 30 minutes, stirring often. Make sure it doesn't stick!
Add 1 pint of half & half and 2 bags of medium sized raw crawfish. Or if you don't feel like dishing out the money for crawfish, you can just get shrimp. Cook for another ten minutes and it's ready to go!
We grilled up a few ribeyes and steamed asparagus to go along with the soup. It was amazing!! It's one of those dishes that tastes like it should have taken hours to prepare and cook, but it doesn't. It's incredibly easy and totally delicious!
