Tasty Tuesday - Corn Salsa & A Cowgirl

Tasty Tuesday - Corn Salsa




Ingredients:
Niblet corn
Avocado
Cherry tomatoes
Red onion, chopped
Lime juice
Olive oil


Just mix them all together (as much or as little of each thing as you want), and serve! It was absolutely delicious! If you recall, I made a similar dip a few months ago. I actually liked this dip a little bit better because of the flavor of the lime juice. In fact, I wish I hadn't eaten it all because I'd like some right now!


A Cowgirl


I'm a day late, but I gained a little inspiration from Two Birds.  This week's inspiration photo was Alexa Chung.




Well, my outfit is a very loose interpretation of this outfit. But I still used this outfit as inspiration. And even better, it inspired me to wear a combination I hadn't been bold enough to try. 


Dress: Maurice's ($10)
Shirt ($6) & Bracelets (Won in a Giveaway): Old Navy
Wedges: Target


I felt a little bit like a cowgirl in this getup. If I had worn my cowboy boots and my new cowboy beach hat, I'm pretty sure I'd have fit right in on the set of Dukes of Hazard. =)

Regarding your comment on my blog this morning: I totally understand what you mean about expecting the enemy's attacks. So often when I resolve to do something specific for God (like what you said about meditating on those verses and putting them into practice) I seem to face more obstacles than usual. I hate to give "that one" more credit than he's due...he's not due any credit as far as I'm concerned. But unfortunately we have to acknowledge that he is real, and his goal is to steal and destroy. Thank God Jesus is waaaaaaaaaaaay more powerful than that and he will guide us! Okay, my sermon's over. Thanks for your heart-felt comments. totally cute! Alexa pales in comparison. I like the gingham shirt with the white dress, so pretty and country chic. Perfect for the summer weather! The corn salsa looks so good, gonna have to try it!

Tiff, do I have to cook the salsa or is it just put into a bowl and mix? If it is the latter I am good! I cannot cook to save my life! Btw...LOVE our inspiration from the 2 birds challenge...gingham is a top fav on my list :)

I have another variation on that recipe that I got from my friend Heather- and I call it "heather's crack dip" because you can't stop eating it!

2 small cans of white shoepeg corn (or one big one)
can of black beans, drained and rinsed
1 can of rotel tomatoes and chili with lime
1 packet of good seasons herb & garlic seasoning blend
an avocado
and a splash of extra virgin olive oil. OMG so tasty! It's really great on grilled chicken or with chips!

I'm not usually a fan of exact copying of an outfit because people have different body shapes and consequently not every look fits the copier (if that makes sense). I do love how you made this outfit work for you!
