Tasty Tuesday - Peacock Colors & Chicken Enchilada Soup

Peacock Colors

My sister is getting married in March (yay!!!) and she's chosen the colors in the peacock feather for her wedding. I think those colors are absolutely beautiful, so I'm really excited! I mean, I'm also excited about her getting married, not just about how pretty it will be. ;) When I saw this skirt, I thought of her. It has a few other colors in it, too, but it predominately has that green and purple that you see in the peacock feather.

Skirt ($12.50) & Cardi (Borrowed from Sis): Maurices
Top (Borrowed from Sis) & Tights ($8): Target
Booties: Madden Girl from 6pm.com (Gift)
Belt: TJMaxx ($10)

I saw this skirt earlier this week when I happened into Maurices. It was on their clearance rack with an additional 50% off, so I snatched it up. I know, I know, my shopping ban is supposed to keep me from doing things like this, but I kind of couldn't help it. Once I enter a store like that or allow myself near the clearance racks at Target, I'm doomed. For my shopping ban to be truly successful, I need to avoid those stores entirely! Which is kind of hard to do, seeing as how Christmas is approaching and it's the time of year where we shop, shop, shop!

Apparently, something over there has caught my attention . . . and is pretty amusing, too.

Maybe it's someone acting all silly like me. . . I'm actually trying to show off my glittery nail polish. I have fallen 100% in love with glittery nail polish! It's easier to apply than regular nail polish (who has time for careful even strokes?) and it's easier to touch up, too! For a busy, on-the-go mom like me, that's perfect! ;)

Tasty Tuesday - Chicken Enchilada Soup

On Sundays, I like to have something easy to fix for lunch because we go to church all morning and I certainly don't want to fix lunch while the kids are hungry and ready for naps. So, I tend to lean towards slow cooker type meals. I recently stumbled across this soup.  I tweaked the recipe a bit, of course, to go along with what I had in the house and it turned out amazing.
You'll need:
3 Cups Chicken Stock
2 chicken breasts, cut into bite size pieces
2 tsp cumin
1 tsp chili powder
1 can diced tomatoes
1 green bell pepper
1/2 cup diced onion
4 cloves mined garlic
1 can black beans, rinsed and drained
1 1/2 cans niblet corn, rinsed and drained
1/2 cup tomato paste
Fiesta blend cheese
Sour cream
Tortilla chips

Add everything except cheese and sour cream to your crockpot and stir.  Cook on high for 3 to 4 hours.  We cooked it for about 3 1/2 hours.  When it's finished, serve it into individual bowls, sprinkle some cheese and a dollop of sour cream on top and enjoy!

I know the recipe looks similar to the chili recipe I posted a few weeks ago, but the chicken stock and chicken give it a totally different taste.  This one will definitely go into my winter meal rotation! =)
